Job description
We are looking for a Chef de partie NB/F/H for our restaurant “Le Jardin du Cloître” located in the heart of old Lille, in the Alliance Couvent des Minimes hotel.
Reporting to the second chef, the chef de partie will be in charge of :
- Supervise clerks on a fish/meat station as well as starters or desserts.
- Check stocks, merchandise orders while organizing service in compliance with HACCP hygiene standards.
Your profile
MAIN RESPONSIBILITIES:
- Setting up service and managing mise en place.
- Prepare dishes, balancing the service from an economic point of view.
- Choose the products to be used in their preparation.
- Contribute to the evolution of the dishes in its part.
- Make, dress dishes and send out dishes on time and at the right temperature
- Take special customer requests into account
- Oversee the presentation, quality and correct temperature of dishes
- Participate in the creation of new technical data sheets and create new ones if needed
- Contribute to the cleaning and tidying of the various work areas and to food safety by complying with HACCP hygiene rules on a daily basis

L’Alliance – Couvent des minimes is a 4-star establishment where history and modernity meet. Located just a few steps from the Grand Place, it enjoys a relaxing environment. The hotel has 75 rooms and 8 suites. The restaurant offers traditional cuisine with regional specialties. Two bars complete the restaurant offer, including a champagne bar in a magnificent suspended glass roof. The hotel has 7 lounges that can accommodate up to 300 guests.
