Job description
Reporting to the General Manager, you will be responsible for organizing and planning the department’s general activity.
Operational responsibilities
- Design the restaurant menu and menus for the various outlets (estaminet, room-service, seminars)
- Research and contribute to the creation of new dishes and products, in collaboration with management and operational departments.
- Be a driving force behind menu proposals for specific events
- Control the quality of food prepared
- Guarantee the application of HACCP standards
- Manage the flow of goods (orders, quality control, stock rotation, waste management)
- Guarantee the proper use of kitchen equipment

Managerial responsibilities
- Supervise and support a 13-strong brigade;
- Participate in the recruitment of teams, integrate them according to Group standards and develop them.
- Ensure that teams are continuously trained.
- Manage team appraisals (annual appraisal, professional interview…) in partnership with the HR department
- Guarantee a good social climate within the team and with all hotel departments

- Cost management and budget monitoring
- Order and inventory management and supplier relations
- Elaborate technical data sheets for all dishes (in collaboration with the cost-controller)
- Ensure compliance with technical data sheets
- Be aware of duty of care and comply with occupational health and safety legislation.
- Prepare schedules and carry out administrative HR follow-up for his/her team
- Supervise the application of and compliance with the establishment’s HR procedures
- Respect the payroll budget for his/her department

Status: Fixed-price executive
Salary: €4,000 gross per month + variable compensation based on objectives
